20 oz. can crushed pineapple (in pineapple juice)
1 1/2 tsp. Coconut extract
1 pkg. angel food cake mix
1/4 cup shredded coconut (optional)

Directions:
Directions:
Preheat oven to 350.
Combine pineapple (including juice), coconut extract and cake mix. Stir well. Spray muffin pan with Baker's Joy. Fill muffin cups 3/4 full. Sprinkle with coconut (if desired). Bake for 15 minutes or until toothpick comes out clean.

**You may want to use paper cupcake liners. It's a good idea to still use nonstick spray on the pan since overflows are very difficult to clean.
