1 1/2 c. crushed Graham crackers
3 T. margarine
2 lb. cream cheese
1 c. sugar
1/4 tsp. cinnamon
4 eggs
1 c. sour cream
1 T. sugar
1 T. vanilla

Directions:
Directions:
Blend Graham crackers and margarine & press around the sides and in the bottom of a 10" spring form pan. Bake at 300 for 5 min.

Blend cream cheese, 1 c. sugar & cinnamon & beat well. Add 4 egg yolks, one at a time. Beat egg whites until stiff & fold into above mixture. Pour into spring form pan and bake at 300 for 1 hr.

Blend sour cream, 1 T. sugar and vanilla. Spread over top of cheesecake & bake 10 more min. at 300. Garnish with fruit if desired, e.g. cherry pie filling.

Judy is the wife of Jack Hollenshead, Jr., the Editor of this cookbook. She is the daughter-in-law of the late Jack & Dorothy (Bellew) Hollenshead. This is the best cheesecake that I have ever eaten. If you love New York style cheesecake then you will love this! I have made this dessert for many people over the last 30+ years and I have never served it to anyone who did not like it.
