1 cup finely diced boiled ham (3 1/2 oz)
1 1/4 cups finely diced natural Swiss cheese, (4 oz)
1 tsp chopped parsley
2 whole chicken breast, split and boned (1 lb)
Salad oil or shortening for deep frying
1 egg
1/2 cup milk
1/4 tsp salt
1/4 cup flour
1/2 cup packaged dried bread crumbs

Directions:
Directions:
1. In a medium bowl, combine ham, cheese, and parsley; mix with hands until mixture holds together. Shape into 4 cones, 3 inches long and 1 in wide a the base. Place in freezer until firm - about 10 minutes.
2. Meanwhile, wash chicken and pat dry with paper towels. Remove skin. Place each piece of chicken between w sheets of greased waxed paper; pound with mallet to flatten.
3. Place a firm cheese-ham cone in center of each piece of chicken and roll up to form a cone. Refrigerate, covered, until well chilled - about 2 hours.
4. In electric skillet or heavy saucepan, slowly heat salad oil (from 1 1/2 - 2 inches deep) to 325F.
5. Meanwhile, beat egg with milk and salt. Dip chicken cones first in flour, then dip in egg and roll in bread crumbs to coat completely.
6. Gently drop into hot oil and fry, turning as necessary, until golden brown on all sides - about 7 minutes.
