8 (4 oz size) skinless boneless chicken breast
1 egg
1/2 cup milk
1/2 cup flour
1 tsp salt
1/4 tsp pepper 1/2 cup shortening
1 (6 oz) can chopped mushrooms, drained
4 Tbs butter or margarine

Directions:
Directions:
1. Wash chicken and pat dry with paper towels.
2. In shallow dish, beat egg with milk. On sheet of waxed paper combine flour, salt and pepper.
3. Dip chicken breast into egg mixture, turning to coat both sides. Then roll in flour mixture until very well covered.
4. Heat shortening in skillet. Add chicken, and fry until golden brown on each side - about 8 minutes per side. Place in shallow baking pan or heat-proof serving platter.
5. Spoon mushrooms over chicken; dot with butter.
6. Broil, 4-5 inches from heat, until sizzling hot and chicken is crispy - about 5 minutes. Makes 8 servings.
