6 T. olive oil
2 cloves garlic, chopped
3 cans diced clams
1/4 c. white wine
1 lb. linguine
2 T. chopped, fresh parsley
salt and pepper to taste
fresh grated Parmesan, optional but recommended

Directions:
Directions:
Heat olive oil. Add garlic. Cook 30 seconds. Pour in clam juice that you drain from clams and white wine. Cook until reduced to about 3/4 c. liquid. Remove from heat and set aside. Cook linguine while preparing above. Bring the sauce in the skillet to a boil and add clams. Cook 2-3 minutes or until hot. Pour clams and sauce over linguine. Toss with parsley, salt and pepper and fresh grated cheese if desired.
