4 eggs, lightly beaten
1 tsp salt
1/2 tsp pepper
1/2 c. oil
3-4 tbsp parsley
1 c. Teabisk or Bisquick
1/2 c. Parmesan cheese
1/2 c. cheddar cheese
1 large onion, chopped
3 c. zucchini, diced

Directions:
Directions:
Mix the eggs, salt, pepper, oil and parsley together. Add the Bisquick, Parmesan and cheddar cheeses, onion and zucchini. Mix well and pour in to 1 deep dish pie plate or 2 regular pie plates. Bake at 350 for 35-40 minutes or until centre of pie is cooked. Can be frozen.
