1 1/4 cups salad oil
2 cups sugar
3 well-beaten eggs
3 cups peeled, chopped apples
1 cup chopped pecans
3 cups flour
1 tsp. salt
1 tsp. soda
2 tsp. vanilla

1/2 cup margarine
1 cup light or dark brown sugar
1/4 cup canned or whole milk
1 tsp. vanilla
Chopped nuts

Combine the salad oil, sugar and eggs in a large bowl, Add the apples and chopped nuts. In a separate bowl sift together flour, salt and soda. Add to apple mixture and stir well. Add vanilla and mix. Grease and flour 2 9-inch square pans. Pour in batter, place in cold oven set to 325. Bake for 45 minutes or until done (For tube pan, bake at 300 for 1 hr. 20 min)

Frosting: Heat margarine and sugar over low heat and add milk. Heat to a boil, stirring constantly. Remove from heat and cool. Add vanilla. Frost cake on top and add chopped nuts, if desired. (Pierce the cake with a fork while hot and drizzle the icing over it--the icing seeps into the cake and makes it yummy).

Cake can also be baked in 13x9-inch cake pan, iced and cut into squares.
