2 T olive oil
4 cloves garlic, sliced
1 C shallots, diced
1 large green bell pepper, diced
3 medium-sized bay leaves
1 t dried oregano
1/2 t red chili pepper flakes
1 lb ground lean turkey
28 oz can whole tomatoes
6 oz can tomato paste
2 C hot water
6 whole wheat hamburger buns

Directions:
Directions:
In skillet heat olive oil over medium heat and stir in garlic, shallots, bell pepper, bay leaves, oregano and red chili flakes. Add ground turkey and brown - breaking up turkey into crumbled pieces. Add tomatoes, paste, salt/pepper and 2 C hot water and mix well. When starts to boil lower heat and simmer until thickened - about 30-40 minutes. Stir mixture and break up whole tomatoes. Discard bay leaves. Serve on toasted buns.
