8 oz Gorgonzola
2/3 cup milk
6 Tbs melted butter
1 tsp salt
1 cup whipping cream (or half-and-half)
2/3 cup grated Parmesan cheese
10 walnuts, (20 halves), chopped
1 Lb semolina pasta, such as fettuccine

Directions:
Directions:
Put Gorgonzola, milk, melted butter and salt into a large pan over heat. Mash up the Gorgonzola, stirring until creamy, about 1 minute. Remove pan from heat.
Drain cooked pasta, return pan (the one with the Gorgonzola), to the stove, and over low heat stir in the cream. Add the cooked pasta, the Parmesan cheese and mix well. Put into a large preheated pasta bowl, and top with chopped walnuts. Serve 6

Gorgonzola is an Italian blue cheese. Using a different blue cheese is not recommended, for the Gorgonzola seems to have just the right texture for the sauce.
