7 cups sliced cucumbers
1 cup sliced onions
1 cup sliced green pepper (optional)

2 cups sugar
1 cup cider vinegar
1 tbsp celery seed
1 tbsp mustard seed

Directions:
Directions:
Sprinkle 1 tbsp salt over the cucumber, onion, and peppers in a covered container and let sit for 1-3 hours. Drain off any juices. Mix the sugar, vinegar, mustard seed, and celery seed together until the sugar is dissolved. Pour the mixture the cucumber mixture and refrigerate. These pickles will keep for several weeks in the refrigerator. There is no need to can them
