Ingredients: chicken of choosing for frying sherry 1 bulb garlic smashed marinade Put chicken in a large bowl. Pour wine to cover about half of chicken in the bowl and add water to come to the top of the chicken. Cut off top and bottom of garlic bulb and separate the cloves but, leave the skin on clove. Place the cloves in a large plastic bag and mark the garlic in the bowl. Add just a little of water in bag to completely rinse out everything including garlic skin and add to the bowl of chicken. The garlic skin added to the marinade will add more flavor from the garlic skin oil to the marinade. Marinade overnight. When ready to fry drain the chicken in a collander. Then dredge in flour and after you have put it in a frying pan, season on both sides with seasoning salt and pepper. Fry as you would any chicken.
