4 slices cut up bacon.
1/4 c. finely chopped onion
1/4 c. finely chopped green pepper.
3 c. cooked rice (one c. uncooked)
2 c. cooked tomatoes
1 1/2 tsp. salt
1/8 tsp. pepper.
1/4 c. grated cheese

Directions:
Directions:
Fry bacon until crisp. Remove bacon to a 1 1/2 qt casserole and whisk to grease dish. Reserve enough bacon fat in the pan to saute. Saute onion and green pepper until onion is yellow. Combine all ingredients except cheese in baking dish. Bake 400 25-30 minutes. Add cheese on top in last 5 minutes of baking.
