10 oz. ziti pasta
1 TB olive oil
1 medium chpped yellow bell pepper
4 cloves minced garlic
2 (14 and 1/2 oz) cans undrained diced tomatoes with basil, garlic, and oregano
6 cups baby spinach leaves
5 to 7 oz. smoked Gouda cheese, divided (about 1 and 1/2 cups)

Cook pasta according to directions and drain. Heat oven to 375. Heat oil in large heavy pan on med-hi heat until hot.. Add onion and pepper; cook 5 minutes, stirring occastionally. Stir in garlic; cook 2 miutes. Add spinach; cook 30 seconds or until spinach wilts, stirring frequently. Remove from heat. Add pasta and half the cheese to mixture, tossing well to combine. Spoon pasta mixture into a 9x13 baking dish coated with cooking spray; sprinkle evenly with remaining cheese. Bake 15 minutes or until cheese melts and begins to brown

This is a really good hearty vegetarian entree, especially if served with a crusty Italian bread. One serving is only 270 calories, with 7 grams of fat and 3 grams of fiber. Only 20 mg cholestorol. The smoky Gouda gives this dish a surprisingly rich flavor and texture for something so light.
