Sunshine Carrot Cake Recipe

1 c. orange juice
1/4 veg. oil
2 eggs
1 3/4 c. white flour
1 3/4 c. wheat flour
1/3 oatmeal
1 1/2 c. sugar
2 tsp. baking powder
5/8 tsp. soda
1 1/2 tsp. salt
1/2 c. dates, chopped
1/8 c. orange rind, grated
5 ozs. carrots, grated


6 ozs. cream cheese
3 1/2 c. powdered sugar
3/4 tbsp. orange juice
1 tsp. orange rind, grated

In mixing bowl combine orange juice, oil and eggs.
Combine all dry ingredients and add to orange juice mixture.
Mix on medium for 1 min.
Add dates orange rind and carrots until well blended.
Pour batter into greased cake pan.
Bake at 350 degrees for 35-45 mins.
Cool before icing.


Beat cream cheese until smooth and creamy.
Add sugar and juice alternately.
Add orange rind and mix well.
Ice cake
