Frying chicken, cut-up
1 c. Pancake Flour
Celery salt
Salt
Pepper
Onion, diced or sliced
Oil or shortening for frying

Directions:
Directions:
Rinse chicken and drain on paper towels to absorb water. Place flour in bag. Add pieces of chicken to bag (3 or 4 at a time), shake to coat and then place into hot oil in fry pan. Sprinkle chicken with salts, pepper and onion. Brown on one side, then turn over and repeat. When browned, lower heat and cover for 20-30 minutes. Remove to Pyrex dish and place in 350 oven for 15 minutes, to allow chicken to crisp up. Serve. Make gravy with pan drippings.

This is the way my mother used to fry chicken. While we were growing up, we enjoyed chicken every Sunday. The onion and celery salt really give it a good flavor.
