3/4 cup butter (room temperature)
3/4 cup confectioners' sugar
1 1/2 cups flour
3/4 cup raspberry jam
3 egg whites (room temperature)
3/4 cup sugar
1/2 cup shredded coconut
1 cup blanched slivered almonds

Directions:
Directions:
Cream butter and confectioner' sugar. Add flour, mixing well, and press into a greased 9" x 13" baking pan. Bake in preheated 350F oven for 12-15 minutes or until golden. Remove pan from oven. Spread with raspberry jam. Beat egg whites with sugar. Mix in coconut and almonds. Spread jam over crust. Beat egg whites until foamy. Gradually add sugar beating until stiff. Fold in coconut. Spread over jam. Sprinkle with almonds. Return to oven and bake for 20 minutes. Cool and cut into rectangles. Makes 2 dozen.
