4 eggs, slightly beaten
1/2 c. oil
3 c. shredded zucchini
1 c. baking mix
1/2 c. onion, finely chopped
1/2 c. Parmesan cheese, grated
2 tbsp. parsley
1 tsp. salt
1/2 tsp. oregano
1 clove of garlic, minced
1/8 tsp. pepper

Directions:
Directions:
Combine eggs and oil in bowl; mix well. Add zucchini, baking mix, onion, Parmesan cheese, parsley, salt, oregano, garlic and pepper; mix well. Pour into greased 9x13-inch baking dish. Bake at 350F for 30 minutes. Cut into 1x2-inch rectangles and serve!
