1 5/8 c. sugar
5/8 c. oil
2 eggs
1 2/3 c. flour
1/2 tbsp. salt
1/2 tbsp. baking soda
1/4 tbsp. cinnamon
10 ozs. raw grated carrots
2 1/2 c. walnuts

Directions:
Directions:
Combine sugar, oil, and eggs and beat on medium for 2 mins.
Combine flour, salt, baking soda, and cinnamon in stainless steel bowl and mix with wire whisk.
Slowly add dry ingredients to oil mixture and beat 1 min.
Add carrots and nuts. Mix until blended.
Pour batter into greased cake pan.
Bake at 300 for 35-45 mins.
Frost with cream cheese icing.
