3-4 bunches of beets
2 cups water
2 cups cider vinegar
1 cup brown sugar
2 Tbs sugar
4 tsp salt
24 whole cloves, optional

Directions:
Directions:
Cut the tops off of beets and boil for 45 minutes or until tender. Drain beets and set aside. In a separate pan, add the remainder of the ingredients and bring to a boil. While waiting for the other ingredients to boil, peel beets and slice and put into jars. After remainder of ingredients come to a boil, add the liquid to the jars and refrigerate. They keep in the refrigerator for a long time. Use as needed.
