2 boneless chicken breasts
1/2 c. "Oven Fry" for pork or chicken (no substitution)
1/2 T. Italian Seasoning
1/4 c. grated Parmesan cheese
1 egg
1/2 c. Olive Oil

Directions:
Directions:
Flatten chicken to 1/4" - 3/8" thick. In a shallow bowl, combine bread crumbs, cheese, and seasoning. In another bowl, beat the egg. Dip chicken into egg, then coat with crumb mixture -- gently pressing crumbs onto the chicken.
Preheat a frying pan with 1/2 c. olive oil. Brown on med. heat until nicely browned and juices run clear. Drain on a paper towel.
