1 cup butter,
3 shallots - chopped,
2 cups diced celery,
2 cups dices carrots,
tbsp chopped garlic,
3 tbsp flour,
1 bottle of beer,
1 cup cream (or so),
2 1/2 cups chicken stock,
2 cups grated cheddar cheese

Melt butter, saute shallots, celery, carrots, garlic, add flour and cook for a few minutes, add in beer, cream, and stock, boil till it thickens, add in cheese and serve
