3 Cups Flour (alt 2 white, 1 whole wheat, 1/2 cup grains),
1/4 teaspoon yeast,
1 1/4 teaspoons salt,
1 5/8 cup warm water (exactly)

Directions:
Directions:
Mix ingredients, cover bowl with plastic wrap, put on an out of the way shelf for 14 hours, knock it down, place on floured silicon baking sheet, dust with flour, let rise 2nd time for 2 hours, pre-heat a large pot in a 450 degree oven, transfer dough to hot pot and bake for 20 minutes with lid on and another 20 minutes with lid off.
