1 large lemon
1 can (16 oz.) salmon, including liquid
1 1/2 c. toasted, whole wheat bread crumbs
1/2 c. non-fat dry milk
1 c. chopped broccoli
3 eggs, beaten
1 tsp. dried dillweed
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Grate lemon rind into a large bowl, then squeeze the juice into bowl. Add salmon, including bones and liquid. Mash well. Add bread crumbs, dry milk, broccoli, eggs, seasoning. Mix well. Spoon mixture into a loaf pan. Bake at 350 for 30 minutes. Serve hot or cold.
