1 cup butter, softened
1 cup white sugar
1 cup confectioners sugar
1 cup vegetable oil
2 eggs
4 1/2 cup self-rising flour
1 tsp. vanilla
1 1/2 tbl. grated lemon peel

Lemon Icing

3 cups confectioners sugar
1/3 cup butter, softened
3/4 tbl. lemon juice

Directions:
Directions:
Cream butter, sugars and oil together in a large mixing bowl, add eggs. Beat until smooth. Add flour, grated lemon peel and vanilla, mixing well. Form dough into walnut sized balls and place on cookie sheet. Flatten dough with bottom of a glassed dipped in sugar. Bake at 375ļ for 8-10 minutes. Allow cookies to cool before icing.

To make icing, mix all ingredients together to desired consistency. Ice cookies when cooled.

I thought long and hard before I decided to make some sort of comment for this cookbook. I wanted what I would have to say to mean something. I know that this cookbook will be a treasured book. The last cookbook made by our family is a treasure to me; literally. I have it stored in a lockbox. It only comes out when I am ready to use it or read through it again. And it will stay there until I have a safer place to keep it. Mealtime for the Cook family has always been much more than eating. Food reminds us of special people in our lives. I know that I canít eat peach cobbler or tenderloin gravy without thinking of Grandma Cook. I canít eat homemade ice cream without thinking of my brother leaning over the freezer to make it for us. I think of Shirley Cook when I eat chicken and dumplings. I know that when my mother makes biscuits she does it because she loves to see us eat them. Pleasure in sharing good food comes to both the cook and the person eating the food. To have these recipes to share is such a privilege. I will think of you when I make your recipes. Thank you for sharing them with me.
