1 cup oil
2 cups sugar
3 cups flour
2 tsp vanilla
1 cup chopped nuts
1 tsp salt
1 tsp soda
1/2 tsp baking powder
3 tsp cinnamon
3 cups grated zucchini

Directions:

Mix dry ingredients, then add liquid. Bake in greaed and floured loaf pans at 325 for 1 hours.
