2 cups all purpose flour
2 cups sugar
1-1/2 cups oil
4 whole eggs
2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3 cups grated raw carrots
1/2 cup chopped nuts
8 ounce package cream cheese, softened
1 pound box confectioners sugar
1/2 stick butter
1 teaspoon vanilla

Directions:
Directions:
Mix all ingredients in above list down to and including cinnamon, with electric mixer until well blended. By hand, add the grated carrots and chopped nuts. Pour into 2 well greased and floured 9 in round cake pans and place into 350 degree oven for 35-40 minutes. After cake is cooled it can be assembled and frosted with following recipe: Cream butter and cream cheese together, add vanilla and beat well. Beat in powered sugar until creamy and of spreading consistency. Spread frosting between layers and on top of cake.
