1 pkg. Angel Food Cake Mix
1 1/2 c. Light Cream
1 sm. pkg. Instant Vanilla Pudding Mix
2 1/2 c. Powdered Sugar, sifted
1/4 c. fresh Cranberries, ground
1 1/2 T. Lemon Juice
4 T. Butter
3/4 tsp. Lemon Rind, grated
Dash of Salt

Directions:
Prepare cake according to directions on package. Place in two jelly roll pans. Bake. Prepare filling by adding instant pudding to cream. Beat 1 minute. Let set 5 minutes. Chill one hour. Prepare frosting by combining 1/2 c. powdered sugar, cranberries and lemon juice. Let stand 30 minutes. Cream butter; add lemon rind and salt. Add remaining sugar alternately with cranberry mixture, beating well after each addition. Spread cooled cake roll with filling; roll up. Frost. Chill 1 hour before serving.

I like to serve this dessert at Christmas time. It is festive, refreshing and a light dessert. It's a bit of work, but worth it.
