1 small potato
confectioner's sugar
peanut butter
Directions:
Directions:
1. Cook and mash one small potato.
2. Add confectioner's sugar until consistency to roll.
3. Roll flat on pastry cloth (coated with powdered sugar).
4. Spread thin layer of peanut butter on potato mixture.
5. Roll as for a jelly roll. Slice and serve.

This recipe is a favorite in Luke's family. The recipe is from his great-grandmother, Belva. It is great to make when you have leftover mashed potatoes.
