Ingredients: 3 egg whites 1 pinch cream of tartar 3/4 c. granulated sugar 1 tsp. vanilla 2 c. whipping cream 4 c. strawberries (or any fruit you want)

Directions: |
Directions: In a large bowl, beat egg whites with cream of tartar unit soft peaks form. Beat in sugar, 1 T. at a time, until glossy peaks form. Beat in vanilla. On foil-lined baking sheet, spread meringue into a 10" circle, pushing up edges to form a slight ridge. Bake in a 275º oven for 1 1/2 hours or until firm to the touch. Turn off oven & leave meringue in oven to dry, or overnight. Remove foil, & let cool. Place on serving platter. Slice strawberries. Whip cream. Just before serving, spread whipped cream over meringue & cover with fruit. Cut into wedges.

Notes: This looks fancy but is easy. It is best to make meringue the night before or early in the day, then finish just before serving. This is a very light dessert, especially liked by women.
