10 lbs. tripe,
1 32 oz can hominy
1 med.onion,chopped
4 garlic cloves, chopped
1 sm can hot enchilada sauce
1 large can red chili sauce
1 3oz pkg. La Laindia brand menudo spice blend
2 tabs. oil

Directions:
Directions:
Trim tripe. Wash tripe in baking soda and rinse well . Cut tripe into 1" squares. set aside. In a large soup pot, saute onion and garlic in the oil. Add tripe to pot and cover with water. Simmer for 30 minutes. Then add red sauce, enchilada sauce, hominy and menudo mix. Simmer until tender. Serve with spanish rice, chopped onion, and lime.
