2 cups coarsely grated zucchini, drained
1 cup Seasoned breadcrumbs
2 Tbsp grated onion
2 Tbsp mayonaisse
2 eggs
2 tsp Old Bay seasoning
1/2 tsp each, salt & pepper
1 Tbsp chopped parsley

Directions:
Directions:
Combine all ingredients in a mixing bowl. Mix until well blended. Form into cakes.
Fry in olive oil and butter until browned on each side.
