3 oz. slab bacon, chopped
1 small onion, chopped
1/2 c. red pepper, chopped
1/2 c. leek, chopped
1 tsp. fresh or dried thyme leaves
1 tsp. fresh or dried marjoram leaves
1/2 tsp. salt
1/2 tsp. black pepper
2 medium sweet potatoes, peeled and cut into 1/2" chunks
1 c. whole kernel corn, no liquid
1 14oz. can chicken broth
3 c. water
2 tsp. cornstarch
1/2 c. heavy cream

Directions:

1) In 4 qt. stockpot, saute bacon over medium heat until crisp. Remove bacon, set aside.
2) Add onion, red pepper, leek, seasonings to bacon drippings. Saute 10 minutes.
3) Add sweet potatoes, corn, broth, and 2 1/2 c. water to mixture in saucepan. Cook until potatoes are tender, 15 to 20 minutes. Mix cornstarch into remaining 1/2 c. water. Stir into soup. heat soup to boiling, stirring constantly. Cook until thickened.
4) Reduce heat to low, stir in cream and reserved bacon.
