1 9-inch Pie Shell, baked
1 1/4 c. Sugar
6 T. Cornstarch
2 c. Water
1/3 c. Lemon Juice, fresh
3 Egg Yolks
2 tsp. Vinegar
3 T. Butter
Grated Rind from Lemons

Directions:
Directions:
Combine egg yolks with lemon juice. Set aside. Mix sugar and cornstarch in saucepan. Add water. Bring to a boil. Stir until thickened. Stir several spoonfuls into egg yolk/lemon juice mixture. Add to sugar/cornstarch mixture in pan. Boil 1 minute longer. Remove from heat. Stir in vinegar, butter and rind. Pour into pie shell and add a meringue on top.
