2 (scant) c. Sugar
1/2 c. Butter
4 Eggs, separated
#2 can Crushed Pineapple (2 1/2 cups), undrained
2 T. Flour
2 Pie Crusts, unbaked

Directions:
Directions:
Beat egg whites until stiff; set aside. Cream sugar and butter. Add egg yolks; beat until light. Add the pineapple (undrained); beat again. Add flour. Fold in stiffly beaten egg whites. Pour into unbaked crusts. Bake at 350 for 30-40 minutes or until knife inserted in center comes out clean.

My mother made these pies very, very often, sometimes four at a time! We enjoyed them and they are so easy. Also good served with a dollop of whipped cream on top!
