1 2/3 cups sugar
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1 tsp salt
2/3 cup shortening
1/2 cup buttermilk (or milk)
1 1/2 cups mashed bananas
1/3 cup buttermilk (or milk)
2 eggs

Directions:

Sift together the dry ingredients. Add the shortening 1/2 cup buttermilk and bananas. Beat for 2 minutes. Add the additional 1/3 cup buttermilk and 2 eggs. Beat 2 more minutes. Bake at 350 F for 30-35 minutes.
