2 cups flour
3 Tbs superfine granulated sugar
1/8 tsp baking powder
1 egg, beaten with a fork
grated rind of one lemon
7 Tbs soft butter
1-2 Tbs milk, as needed

Directions:
Directions:
Sift the dry ingredients and make a well it the center. Drop the beaten egg, lemon rind and soft butter into the hole and knead together to form a dough of rolling consistency. If to stiff, add a tablespoon of milk. If to soft, add a tablespoon of flour. Form dough into a ball, wrap in waxed paper or foil and chill for at least 2 hours. Makes enough for one large 9-10 tart shell or 2 small tartlets. Roll out and fit to pan. Prick the bottom or the tarts and bake at 425F for 10-12 minutes or until golden brown.
