8 - 12 pieces of chicken
1 c. flour
1/2 c. bread crumbs (I use Italian)
1 1/2 c. oil or shortening
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Mix flour and bread crumbs together; coat chicken on all sides. Melt shortening or oil in heavy skillet. Add chicken; sprinkle some salt and pepper over each piece if you wish. Fry till brown, then flip. Keep turning to keep from burning. Start out on high heat and turn down as needed.

You can also add any other spices to the flour mixture before coating chicken: paprika and garlic are 2 good ones...
