2 large white potatoes
1 medium sized onion
2 large eggs
1/4 cup all-purpose flour
1 teaspoon salt
about 6 tablespoons vegetable oil

Directions:
Directions:
Scrub potatoes, but do not peel. Cut potatoes and onion into quarters. In food processor with knife blade attached, blend potatoes, onions, eggs, flour, and salt until chopped but not smooth. (Or, coarsely shred potatoes and onions.)

In a 12 inch skillet over medium-high heat, into 3 tablespoons of hot oil, drop potato mixture by heaping tablespoons, pressing gently with pancake turner to flatten. Cook pancakes until golden brown on both sides; remove them to warm platter as they brown, and add more oil as needed.
