Stale roll (3 0z.)
Milk for soaking
6 Tbsp. butter
4 eggs
turkey liver
salt
pepper
green parsley
bread crumbs

Directions:
Directions:
Soak roll in milk, drain, grind. Rinse liver, remove membrane, grind. Cream butter, add egg yolks, one at a time while stirring, when the yolks combine with the butter, add salt, pepper, parsley and liver, mix. Combine at the end with bread crumbs. Beat egg whites frothy, blend with mixture and if too thin, add 1-2 spoons of bread crumbs. Fill turkey with stuffing at jowl and abdominal cavity, carefully lifting the skin dividing the membrane from the meat at the former crop, stuff abdominal cavity too; truss.
