"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
4 eggs 1 c. white flour 1 c. milk 1/2 t. salt 2 T. melted butter
Beat together eggs and milk. Add flour and salt. Beat with a fork until mixture is uniform. Preheat the muffin tin in the oven at 375 for 5 minutes. Brush the cups and top surface of the pan generously with melted butter. Fill each muffin hole 2/3 full with batter. Work quickly so the tin stays hot. Place in oven and bake for 35 minutes without opening the oven. Prick each popover with a fork to let steam escape (helps hold their shape). Serve immediately.
