4 egg yolks
1 egg white
1/2 tsp. salt
1/4 cup confectioners sugar
1 tsp. vanilla
1 Tbsp. rum or sherry extract
1 cup sifted flour
1/2 cup rolled oats

Directions:
Directions:
Add salt to egg yolks and white; beat for 5 minutes. Add sugar, flavorings and flour. Mix well. Blend in rolled oats. Turn out on floured board and knead until smooth and elastic, about 5 minutes; cut dough in half and roll each half to about 1-inch thickness. Cut into 3/4 inch by 4- inch strips. Cut a slit 1-inch long in one end of each strip. Pull the other end through it. Fry in 375 F deep fat until golden brown. Makes 3 dozen cookies.
