6 cups tortilla chips, 2 T vegetable/canola oil, 3 cups diced or shredded cheddar & monterey jack cheese - blended, 2 T fajita seasoning (from packet), 1 small yellow or red bell pepper or both, 1 lime, 2 T snipped cilantro - fresh, 1/4 cup sour cream & 1 tsp fajita seasoning

Arrange tortilla chips overlapping on a large baking stone or cookie sheet. Cook chicken in oil, adding 2 T fajita seasoning. Sprinkle chicken mixture evenly over tortilla chips and top with shredded cheese. Bake 5-7 minutes in oven preheated to 425. Dice bell pepper finely,and add juice from 1/2 lime. Mix well. Snip cilantro and finely slice other 1/2 of lime. Spoon bell pepper mixture over nachos and sprinkle evenly with cilantro. Mix sour cream with 1 tsp fajita mixture and drop evenly over tortilla chips. Garnish with lime slices.
