2 whole eggs
2 cups sugar
1 cup cooking oil
2 1/2 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1 tsp vanilla
4 cups tart apples, diced
1 cup walnuts or pecans, chopped
1 cup (6 oz. pkg.) butterscotch chips

Directions:

Grease a 13x9x2 inch pan. In a large bowl beat eggs slightly. Add next 8 ingredients. Mix by hand. Batter will be stiff. Fold in apples and nuts. Spread evenly in greased pan. Sprinkle butterscotch chips over top of batter. Bake at 325 for 55 minutes or until done.

Delicious served warm by itself or topped with whipped cream or vanilla ice cream. Reheats well in the microwave. This was a 3rd-place winner in the Cub Scout Father-Son Bakeoff.
