1 box wheat pilaf
2 c water
1 green pepper, chopped fine
2 large carrots, peeled and grated
1 cucumber, diced fine
1 large onion, chopped
DRESSING:
4 T chopped parsley
1/3 c freshly squeezed lemon juice
1/3 c olive oil
salt and pepper, to taste

Directions:
Directions:
Put one cup of the wheat pilaf into a bowl. Boil the water and add that to the pilaf. The water will be absorbed within an hour. When it is cool, add the green pepper, carrots, cucumber and onion. Add the dressing and allow the salad to cool before you serve it.
