2 T. Cornstarch
1 c. Water, hot
1 T. Butter
1 tsp. Vanilla
4 c. Prepared Fruit
1 c. Flour
3/4 c. Oatmeal
1 tsp. Cinnamon
1 c. Brown Sugar
1/2 c. Margarine or Butter

Directions:
Directions:
Combine 1 c. sugar, cornstarch and hot water. Cook until thick and clear. Add 1 T. butter and vanilla. In another bowl, mix flour, oatmeal, cinnamon and brown sugar; cut in 1/2 c. margarine. Mix until crumbly. Place half in bottom of 9 x 13-inch baking pan. Combine fruit with liquid mixture and pour over crust. Sprinkle remaining crust mixture over fruit mixture. Bake 1 hour at 350. Good served with whipped cream or ice cream.

This is the best crisp recipe I've ever found. It's easy and works equally well with any of the fruits. Omit cinnamon and use almond extract if using cherries or peaches. Best served the day it is made.
