1/2 c. Butter
1 1/2 c. Powdered Sugar
3 Eggs
3 T. Lemon Juice
2 long Angel Food Cakes
1 pt. Heavy Cream, whipped
Coconut

Directions:
Directions:
Mix butter and powdered sugar. Beat in egg yolks, one at a time. Add lemon juice. Set aside. Beat egg whites and fold in 1/2 pt. whipping cream, whipped. Fold the two mixtures together. Cut cakes in long slices. Line a 9 x 13-inch pan with 1/3 of the cake. Add 1/2 the mixture, then another layer of cake, then remaining mixture and the last cake layer. Make the day before. A couple hours before serving, frost with 1/2 pint whipping cream, whipped, and top with coconut.

I like this dessert for Easter Dinner. There is something "springtime" about it. If you can't find the long angel food cakes, just use what you can get, or bake an angel food cake mix in a 9 x 13-inch cake pan.
