1 unbaked pie crust
1/2 lb. Swiss cheese
1/4 lb. Muenster cheese
4 eggs
2 c. half 'n half
1/2 lb. fresh mushrooms
1/2 lb. fresh spinach
2 T. olive oil
salt and pepper to taste

Directions:
Directions:
Mix and sprinkle grated cheeses in the bottom of the pie crust. Saute sliced mushrooms and spinach in oil until tender. Drain. Spread over grated cheeses. Beat eggs with half 'n half and add salt and pepper. Pour over other ingredients in crust. Bake at 425 for 15 minutes. Turn oven control to 325 and bake 40 minutes more. Center of pie should spring back when touched if ready. Cool for at least 10 minutes before cutting.
