1 1/4 c. Fine Cracker Crumbs
1/4 c. Parmesan Cheese
1/2 c. Butter, melted
1 1/4 c. Milk
2 c. Whole Kernel Corn
1 tsp. Onion Salt
1/4 tsp. Black Pepper
2 T. Flour
1/4 c. Black Olives, pitted and chopped
1/2 c. Green Onions, thinly sliced
2 Eggs, beaten
1/2 tsp. Paprika

Directions:
Directions:
Toss together crumbs, cheese and butter. Reserve 2 T. Pat rest into 9-inch pie plate. Bring 1 c. milk, corn, onion, salt and pepper to boil. Simmer for 3 minutes. Blend 1/4 cup milk and flour; add to corn mix. Cook until thickened. Remove from heat. Mix in olives and scallions. Blend 1/2 cup into 2 eggs; then add to hot corn mixture. Spoon into crust. Top with 1/2 tsp. paprika and reserved 2 T. crumbs. Bake uncovered at 400 until set, about 20 minutes. Serve with salsa.

This is good with a Mexican main course. Don't forget to serve the salsa with it. It's also very colorful!
