1 1/2 lbs. pork cut in strips (1/2"x2")
2 T fat or cooking oil
1/4 cup water
2 T cornstarch
1/2 tsp. salt
1/4 cup brown sugar
1/4 cup vinegar
1 T soy sauce
1 can (No.2) pineapple chunks (drain, save juice)
1 cup pineapple juice (from chunks plus water)
3/4 cup green pepper, cut in strips
1/4 cup onion, thinly sliced

Directions:
Directions:
Brown pork strips in hot fat or oil. Add 1/4 cup water, cover, and simmer until cooked and tender. Combine cornstarch, salt, brown sugar, soy sauce, pineapple juice, and vinegar. Cook and stir until slightly thick. Add green pepper, onion, and pineapple chunks. Cook 2-3 minutes. Serve hot over rice.
