Lemon Feta Chicken Recipe

2 lbs. boneless chicken cut up
lemon juice
feta cheese
salt & pepper
red onion

Preheat oven 350

Cut up chicken place in oven friendly pan (spray pan 1st)

Pour 1 TBSP lemon juice over chicken

Sprinkle salt & pepper over chicken to taste…(I also used garlic salt for alittle extra taste)

1 cup of crumbled feta (I used the tomato & basil) sprinkle feta over chicken

Chop up onion and tomatoes and sprinkle over randomly

Pour another 1 TBSP of lemon juice over chicken

Bake 40 minutes

When chicken comes out – sprinkle parsley on it (and optional: red pepper)

Serve with rice
